Recipes from Torockó - without the pretension of plenitude, of course...
...they are talking, continously...they are telling us the "tricks"...with shining eyes...we are listening, we are writing...with shining eyes...
1. Ash-bag
ingredients: 25 dkg of flour, 6 eggs, 20 dkg of butter, 25 dkg of sugar, 25 dkg of minced nuts, 1 lemon, 1 little spoon of (burnt) alum
preparation: Make a well-mixture with the 25 dkg of flour, 6 egg yolk, 20 dkg of butter and the alum. We should make 48 "balls" from this mixture, we put in the refrigerator for 12 hours. For the cream we take the 6 egg-white, and we make a mousse with the 25 dkg of sugar. Then we add 25 dkg of minced nut and the zest of 1 lemon. From every ball we make a "rectangle", then we put a spoon of mouse on it. We fold them in a bag-form and we bake them on slow fire. After baking we spred vanilla-sugar on them.
2. Woodmilk (local speciality for fast)
We have to take sun-dried fruits (apple, pear, plum, gooseberry, red currant, crab apple!), we put them in water for a short time, then we cook them till they get a stewed fruit-consistence. We serve it with mush (polenta).
3. Parliament-soup
To the above written woodmilk we add smoked bones, parsley, carrots and we start to cook them. When the soup is ready, we add a mixture of egg-flour-sour cream.
4. Somodi milk-loaf
ingredients: 1 egg, 1 kg of flour, 5 dkg of yeast, 1 little amount of salt, 1 dkg of cinnamon, 20 dkg of sugar, 2,5 dl of water, 2,5 dl of milk, 20 dkg of butter
preparation: We "grow" the mixture of: yeast, 1 spoon of sugar, a little salt and milk (not hot!). We have to mixture the flour, 1 spoon of sugar, the egg and the yeast-mixture, then we add the 1/4 part of the run butter, and we knead this until the cake become "bubbly" (like it has bubbles). Then we leave the kneaded cake for a rest of 1 hr, then we make a rectangle from it, on a table. Then we have to mix the sugar and the cinnamon. With the 1/3 part of this mixture we have to spred the cake, then we have to add run butter on it. We fold the cake as a rectangle. Then the half part of this must be spred with sugar and cinnamon-mixture, then we have to add run butter too, then we fold the cake in the same way. This can be repeated as many time we want it to do. We fold (or spin) the cake and we put it in a clay-plate (or ceramic plate), which was previously greased with butter and flour, and we wait approx. 1 hr. Then grease the upside of the cake with run butter and then we must bake it approx. 30-40 minutes in a preheated oven. It can be make without eggs too.
